{no squishy toms!}

{Thank the Lord it didn't rain today, which meant no squishy toms for me :) It has been quite a nice day! The little girl I nanny for was very well behaved and we had fun eating banana bread and reading books by the fire! Tonight all I wanted was a simple dinner, that was warm and filling and a hot drink! Therefore I decided to make my favorite spiced orange tea! A lot of people think its weird but once they try it they almost always love it. It's really easy to make, all it is is...

1 cup tang
1 cup powdered lemonade
1 cup powdered instant tea (like that Nestea stuff...unsweetened)
1 1/2 cups sugar
cinnamon to taste

You can do it in as large of a batch as you want. I like to make a whole bunch and give it in mason jars as Christmas gifts. They have a lot of the ingredients you need at Costco for super cheap.
Just add 2-3 spoonfuls or as much as you like to a mug of hot water and mmmmm...

And for dinner I found a freakin awesome recipe that I had written in my cookbook awhile back! Ok, I have to start out by saying I totally love instant mashed potatoes! Forgive me!

Parmesan Pesto Potato Soup
2 cups instant potato flakes
32 oz. chicken broth
1/2 cup half and half
1 cup shredded parmesan
salt and pepper
4 tsp. pesto

Stir potatoes, stock, and half and half in a medium saucepan and bring to a boil. Reduce heat and simmer for 5 minutes, stirring occasionally. Stir in parmesan cheese and simmer another 5 minutes. Season to taste. Ladle into bowls and swirl pesto into bowl. Add a bit more shredded cheese!
and to top it all off we made funfetti cookies! Hooray!
Good night all!

  3. Both the tea and the soup sound delicious! I'm definitely going to have to try those, especially since it's getting colder outside.
